3-Cheese Egg Bake Recipe
Egg dishes are always welcome, especially at brunch, and it’s nice to have a few good ones that can be made at the last minute when unexpected guests come or just because the family wants something better than cold cereal on a weekend. There are hundreds of good brunch dish recipes out there; the ingredients vary and most recipes can be tailored to personal tastes to please everyone at the table. 3-Cheese Egg Bake has become a go-to brunch dish that was originally adapted from several similar recipes. The first time I made it, I had a vegetarian guest, so I put out bacon and ham on the side, as well as freshly baked breads. Everyone, even the non-vegetarians, loved this egg bake.

Incidentally, leftovers freeze well. The recipe can be varied by adding different cheeses, or vegetables such as chopped green onions, asparagus, broccoli, etc. You can also add your favorite seasoning in lieu of the Italian seasoning; if it is a seasoning with salt added, omit the salt in the flour mixture. The texture of this egg dish is extra good because there are chewy chunks of mozzarella and creamy pockets of cream cheese. This one is a winner.

12 Servings

1/2 cup melted butter
2 cups cottage cheese
2 cups mozzarella cheese cut into 1/4” dice (or grated)


1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon Italian seasoning, (optional)

10 eggs

1 8 oz. package cream cheese, cut into 1/2" chunks

  1. Preheat oven to 350º.
  2. Spray a 9" x 13" baking dish with non-stick spray.
  3. Mix the butter, cottage cheese, and mozzarella cheese in a mixing bowl.
  4. Measure the flour, baking powder, salt, and Italian seasoning (if using) into a fine strainer set over the cheese/butter mixture; shake through.
  5. Mix well at low speed (or if not using a mixer, whisk together).
  6. Add the eggs and mix.
  7. Pour the mixture into the prepared baking dish.
  8. Dot the top evenly with the cream cheese chunks.
  9. Bake 30-35 minutes or until set.
  10. Remove from the oven and let sit 10 minutes before cutting into squares.
